Grandmas Fruited Rice

The recipe we give below is the classic style that Grandma makes for Christmas every year. Actually Grandma always makes a double batch, but we have given measurements for just enough to feed 4 to 5 people.

Grandmas Fruited Rice

1 Cup cooked rice still warm 1/4 Cup granulated sugar 2 Pints fresh whipping cream 2 Cups powdered sugar 1 Standard size can fruit cocktail, drained 4-5 Bananas, cut long ways and sliced thin 2 Cups pecans or walnuts - chopped 2 Tsp. vanilla flavoring

Mix the sugar and cooked rice and set aside.

In large glass bowl use either a whisk or an electric mixer to beat the whipping cream to a medium froth - it is not necessary to go all the way to peak.

Then slowly mix in the powdered sugar and vanilla to taste, being careful not to flatten the cream. Next add the canned fruit, bananas, and nuts. Once blended well cover the mixture with wax paper, and place in the refrigerator until chilled.

The mixture may appear to be a little too wet before chilling, but don't worry the rice will continue to absorb liquid as it cools.

Tips and Ideas on Variations

This recipe doubles easily, and many substitutions can be made. The nuts can be chopped or left whole - whichever you prefer. Any type of fruit can be used, and actually in any amount. Since there is no actual cooking of the finished product you can add as much or as little fruit or nuts as you like. Marshmallows and raisins make wonderful additions as well.
