Tomatoes (pref. overripe)

Wine vinegar

Salt

Cinnamon

Allspice

Mustard powder

Cayenne pepper

Baking powder

Dark brown sugar
Method:
PLACE TOMATOES AND VINEGAR in a large saucepan over medium heat.
Cover and cook until soft, about 30 minutes.
Strain the tomatoes or place through a food mill.
Discard seeds and skins and replace tomato pulp in a clean saucepan.
Add all other ingredients and let simmer over medium heat about 2 hours, or until reduced to 6 cups.
Stir occasionally.
The mixture should be thick.
