Italian Brunch Rice

Serves:

Ingredients:


1/2 lb Sweet Italian sausage
1 c Sliced fresh mushrooms (4oz)
1 lg Carrot, shredded
1/2 c Sliced green onions
4 Eggs, beaten
1/4 c Milk
1/2 ts Salt
1/2 ts Ground black pepper
3 c Cooked rice
1/4 c (1oz) grated Parmesan cheese

Method:


Cook sausage in large skillet over medium heat until browned.
Drain and return to skillet.
Add mushrooms, carrot, and onions and cook 2 minutes.
Combine eggs, milk, salt, and pepper in small bowl.
Reduce heat to medium and pour egg mixture over vegetables.
Cook, stirring,1-1/2 to 2 minutes.
Add rice and cheese, stirring to separate grains.
heat 2 more minutes, and serve immdediately.
Serves 8.
